Oklahoma City Onion Burgers

This was a challenge on a food truck competition. We tried it and liked it. Another choice when you are tired of a plain burger.
Serving Suggestions:
We did twice-cooked Belgian fries with this.
Ingredients:
3/4 pound of hamburger for two people
1/2 white onion sliced thin
Sliced dill pickles
Yellow mustard
Buns
Salt & pepper
Cheese of your choice

Instructions:
1. Roll 1/2 of the hamburger into a ball and then smash it flat with the bottom of a pan or mallet. It should end up about the size of the burger patty you want.

2. Cook on a hot griddle. Top with the raw onion, sprinkled over the burgers and smash the onion into the burger as best you can. Add some salt and pepper.

3. Turn over after a minute or so such that the onions are now on the bottom. Cook until the onions caramelize some and you get the burger doneness you want. Top with cheese and allow to melt.

4. Assemble the burger: bottom bun, mustard, pickles, burger.
