Ingredients:
5-6 Reinette /Granny Smith apples
1/2 cup sugar
1/2 cup butter
1/2 recipe pate brisee dough

Instructions:
1. Peel the apples. Quarter them and cut out the cores.

2. In a round or oval "frying" pan than can be put in the oven, melt the butter over medium heat. Add the sugar and stir. Add the apples with the "cored" side down. Cook over medium heat for about 5 minutes. Carefully turn the apples and cook for about 5 minutes. Turn again, cook 3-4 minutes. Turn again and cook for 3-4 minutes. The apples should end up with the cored side up, and the butter-sugar mixture should begin to carmelize. Turn off heat.

3. Roll out dough to a size that is somewhat larger than the frying pan.

4. Carefully fit the dough over the pan (on top of the apples). Using a rolling pin, trim the dough by rolling it over the edge of the pan.

5. Cook in preheated 400°F oven for 20 minutes or until the dough is cooked and starts to brown.

6. Remove from oven, cover with platter and turn upside down.

7. Sprinkle with powdered sugar and serve warm or cold.
