Port Marinade 1 cup olive oil 1/2 cup Port wine 2 head garlic, cut in half horizontally 6 sprigs fresh rosemary 12 black peppercorns 12 lamb loin chops, about 5 oz. each Peach and Green Chili Salsa (see elsewhere) Potato Gratin (see elsewhere) |

Instructions:

1. Make the marinade, doubling the quantities shown, add the lamb and let the chops marinade for at least 3 hours, but preferably overnight, in the refrigerator. 2. Make the salsa and the potato gratin, which needs 40 minutes to cook. Prepare the grill. Remove the lamb chops from the marinade and grill them over medium-high heat to the desired doneness, about 3 to 4 minutes per side for medium rare. Serve with salsa and potatoes. |
