Comments:
Virtually any compatible ingredients can make up the filling of a quiche. Seafood. Vegetables. But my favorite is sauteed mushrooms, ham chunks, and gruyere cheese.
Serving Suggestions:
An appetizer or light main course with salad.
Ingredients:
Pate brisee
4 whole eggs
1 cup creme fraiche or cream
Salt, pepper, nutmeg

Instructions:
1. Make the dough and precook in a hot oven for 10 minutes.

2. Select ingredients and chop them into small chunks. If using mushrooms, sauté them in some butter over very high heat and add some salt and pepper. Grate any cheese.

3. Sprinkle ingredients onto the crust.

4. With a whisk, mix the eggs and the cream. Add some salt and freshly ground pepper to taste. Add a sprinkle of nutmeg. Whisk well. Pour over the ingredients in the crust. Put a little freshly ground pepper on top.

5. Cook in hot oven (400°F) for 20 - 25 minutes. Should brown lightly on top and set well. Let cool for a few minutes before serving.
