Pollo de Vargas -- Grilled Marinated Chicken with Peach and Green Chile Salsa

Ingredients:
2 chickens, 2-1/2 to 3 pounds each, halved lengthwise, wings removed
1 tbs. ground cumin
1-1/4 cups fresh orange juice
1/4 cup olive oil
1 tbs. pure chile powder

Peach and Green Chile Salsa (see in sauces)

Instructions:
1. In a small bowl, whisk together the cumin, orange juice, oil, and 1 tablespoon chile powder. Arrange the chicken halves in a large shallow baking dish and pour the marinade over them, turning them to coat them well. Let the chicken marinate, covered and refrigerated, for at least 1 hour and preferably overnight.

2. Prepare the grill. While it is heating, prepare the salsa.

3. Grill the chicken for between 20 and 25 minutes or until it is just cooked through, turning occasionally and basting it with the marinade.

4. Serve the chicken with the salsa.
