I must admit, this did not sound great when I read the recipe. But, it was a Plated dish, so all the ingredients had arrived on our door step, and we were hungry. I was pleasantly surprised by the dish. |

1 small yellow onion 2-3 tbs. butter, divided 1 clove garlic 1 tsp. tomato paste 1 tsp. Worcestershire sauce 1/2 tsp. hot sauce, or more to taste 8 oz. ground chicken (turkey would probably work, too) 2 brioche buns 2 cups shredded cabbage |

Instructions:

1. Make the BBQ mixture by sautéing chopped onion in 1 tbs. butter over medium-high heat for about 5 minutes, until translucent, stirring occasionally. Add minced garlic, tomato paste, Worcestershire sauce, hot sauce, and 1/2 teaspoon salt to the pan. Stir together, warm and remove from heat. 2. While the BBQ mixture cools, season ground chicken with 1/2 teaspoon salt. Add the BBQ mixture to the meat and with clean hands, gently mix together until fully combined. Form 2 patties using your thumb to create a small indent in the middle of each patty. 3. Add a knob of butter to a skillet and when hot, quickly toast the buns. 4. Melt remaining tablespoon butter in the skillet over medium-high heat. When foamy, place the burgers in the skillet and cook for 5-6 minutes on each side, until completely cooked through. 5. While the chicken cooks, mix the shredded cabbage with 1/2 teaspoon salt and massage for 1-2 minutes to break down the cabbage. 6. Assemble by placing a chicken patty on the bun, top with slaw and serve. |
