Add the Cultures

Add the cultures which "ripens" the milk and give the cheese flavor.

Manchego is a unique cheese because it requires both a low temperature (mesophilic) and high temperature (thermophilic) culture. These are added when the milk temperature reaches the target temperature called for in the recipe.
