Ingredients:

1 pound sweet Italian sausage meat 2 tbs. pumpkin seeds 1-1/2 cups coarsely chopped white mushrooms 1-1/2 cups 1/4-inch diced white sandwich bread 1 tbs. chopped fresh chives 1 tsp. chopped garlic 1/2 tsp. red pepper flakes (optional) 1 tbs. good olive oil Polenta |

Instructions:

1. In a medium bowl, mix the sausage meat, pumpkin seeds, mushrooms, bread, chives, garlic and red pepper flakes, if using, together well with your hands. Divide into four patties, cover and refrigerate or cook right away. 2. When you are ready to cook the patties, heat the olive oil in a large skillet. Sauté the patties over medium head, covered most of the time, for 2-1/2 to 3 minutes per side. Let rest in the pan while you prepare the polenta. 3. Spoon some polenta on each of 4 plates and top with a patty, spooning some juices on top, and serve. |
